Sanuki udon is the specialty dish of Kagawa Prefecture and there are more than 600 udon shops there. Kneading and repeatedly stepping on the dough creates the udon noodler's signature firm texture. The broth made from dried young sardines elevates the dish and together, they create a perfect combination. This shiny, golden color is inspired by the broth that you instinctively want to pour over a bowl of udon noodles.
